Simple Fried Eggplant

  • 1 Large Eggplant
  • 2 Extra Large Eggs
  • Salt
  • Pepper
  • 2Tbsp Oil

Instructions

Cut Eggplant into rounds about finger thick. Separate the yolks from the whites and save the whites. In a bowl whip up the yolks till frothy. Add the whites and whip up to frothy again. Heat oil in fry pan. Dip eggplant into egg then quickly place into fry pan. Salt and pepper the eggplant as it fries. Fry till golden brown and eggplant is cooked through.

May need to add a little oil to pan as you cook more eggplant.
